The Western Cape is ideal for olive production as the Mediterranean climate is perfect to meet the needs of the fruit. The olive colour depends on the ripeness of the olive. Olives start off green and turn dark brown or black as it ripens. The fruit are packed with antioxidants, vitamins, probiotics and fibre. Some olive cultivars are best green and used for oil production, others are best riper and black and are used for table olives.
Frantoio olives originates from Tuscany, Italy and is a highly acclaimed oil variety for making extra virgin olive oil with fruit having a high oil content of 18-20%.. Fruits are small to medium in size and ripens mid to late season. Frantoio oil is aromatic and light to the taste with hints of spicy and savoury flavours and leaves a delicious aftertaste of almonds and herbs.
Coratina olives originates from Apulia, Italy and is adaptable to different growing areas. Coratina fruit have a high oil content of 19-24%. Fruit are medium in size and have a strong peppery flavour and are high in polyphenol levels which are great for maintaining ‘good’ cholesterol and antioxidant levels.
Mission olives originate from California and is the most popular olive cultivar in SA due to the fruit being used for both oil and table olives. Fruit are small and round in shape and have a good pip to flesh ratio. Olives are usually picked black for pickling and green for oil production. Fruit bear early, but ripen late.
Manzanilla olives originate from Spain and are excellent for producing table olives with a low oil content of 10%. They are slightly larger than the Mission olives and have a round shape, which earned them the name “little apple”. Olives are valued for ease of pit removal and their superb flesh quality. Fruit are picked while green and are perfect for stuffing with pimento or garlic
